Tortilla Quiche
A fun and easy breakfast or brunch that is easy to modify or enhance! Ingredients
- 1 Flour tortilla large
- 4 Eggs whisked
- Handful of spinach chopped
- 6 Cherry tomatoes halved
- 8 Black olives halved
- 2 green onions
- 1/4 Red bell pepper diced
- Large handful of cheddar cheese, grated
- Small handful of Feta crumbled
- Chives for garnish
- Add spice of your choice: salt, pepper, paprika, chipotle seasoning, Mrs. Dash, hot sauce, jalapenos, etc.
Instructions
- Carefully press 1 Flour tortilla into the baking dish.
- Add spinach to the bottom.
- Whisk 4 Eggs and add tomatoes, olives, onions, red pepper, cheese and about ¾ of Feta cheese. Mix well.
- Pour the egg and veg mixture over the spinach. Top with the remaining feta.
- Bake at 400°F for 20-25 minutes. Serve topped with chopped Chives.
Notes: Have fun mixing up the veggie and types of cheese you use in it. Make sure there is a little bit of space at the top, though, because it will puff up.
