I am a great lover of hummus, but have never tried to make it. This recipe is SO easy, and I love its nod to autumn, my favorite season of the year!!! Enjoy!!!
Pumpkin Hummus
Ingredients:
1 (15 oz) can chickpeas, drained and rinsed
1/2 cup pumpkin puree (canned or homemade)
1/4 cup tahini (or substitute a nut butter)
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground paprika
Salt and pepper to taste
Pumpkin seeds (pepitas) and paprika for garnish (optional)
Directions: In a food processor, combine all ingredients and blend until smooth and creamy. Serve with pita bread, crackers, or fresh vegetables or use as a spread in wraps.
