LOW CARB Verde Chicken Cauliflower Casserole 20 oz frozen or fresh cauliflower florets (about 4 cups) 4 oz. cream cheese (low far works fine) 2 cups cooked chicken, shredded or cut up ½ cup salsa verde ½ tsp salt 1/8 tsp pepper 1 cup sharp shredded cheese (low fat if you can find it) ¼ cup sour cream (low fat works fine) 1 TBSP fresh cilantro (optional) Instructions:
- Microwave cauliflower for up to 10 minutes, until fork tender (this will depend on the wattage of your microwave and if you use fresh or frozen)
- Add cream cheese and microwave another 30 seconds. Stir.
- Add the rest of the ingredients. Stir.
- Bake in preheated 375 degree oven for 20 minutes
- Serve hot
Note: Gretchen likes to add a small can of Rotel tomatoes with peppers, and/or some black beans.
