Holiday Turkey, Cranberry & Balsamic Glazed Flatbread
Ingredients:
1 pre-made flatbread or pizza crust
1/2 cup cranberry sauce (homemade or store-bought)
1 tablespoon balsamic vinegar
1/2 cup shredded mozzarella cheese
1/4 cup crumbled goat cheese
/4 red onion, thinly sliced
1 cup cut up, precooked turkey Fresh rosemary or thyme sprigs,
for garnish Salt and pepper, to taste Arugula, for topping (optional)
Instructions:
Preheat the Oven: Set your oven to 400°F. Lightly grease a baking sheet or line it with parchment paper for easy cleanup, or place a pizza stone inside if you’re using one.
Make the Cranberry Glaze: In a small bowl, mix the cranberry sauce with balsamic vinegar until smooth. This tangy-sweet glaze will serve as the flavorful base for the flatbread.
Assemble the Flatbread: Place the flatbread on the prepared baking sheet or pizza stone. Spread the cranberry-balsamic glaze evenly over the flatbread with the back of a spoon. Layer the shredded mozzarella cheese over the glaze, followed by crumbled goat cheese for a creamy, tangy contrast. Arrange the thinly sliced red onion on top of the cheeses, spreading it evenly for a mild, sweet onion flavor in each bite. Season and Bake: Sprinkle a light touch of salt and pepper over the flatbread. Bake in the preheated oven for 10-12 minutes, until the cheese is melted, bubbly, and the crust is golden and slightly crisp around the edges. Finish with Fresh Herbs: Remove the flatbread from the oven and garnish with fresh rosemary or thyme for an aromatic touch. For extra freshness, add a handful of arugula if you’d like.
Serve. Note: I often skip adding the Balsamic Vinegar to the cranberry sauce and just drizzle some Balsamic Glaze from the store over the cranberry sauce when I put it on the flatbread. Also, home made cranberry sauce is by far my preference! It’s easy to make, so give it a try!
