Egg Pickle Salad


This is an easy, low carb meal with no sacrificing!  If you are a pickle and avocado lover, you will love the tang the pickles bring and the richness of the avocado. Pickle Egg Salad Ingredients

  • 5 eggs
  • ½ avocado
  • 1/2 cup dill pickles
  • handful fresh dill, chopped
  • ½ shallot
  • 1 tbs dijon or grainy mustard
  • 1 tbs light mayo
  • ¼ cup cottage cheese
  • Pinch of salt and pepper

Instructions:

  1. Hard boil the eggs. Make them using your favorite method.
  2. Peel eggs.
  3. Place all ingredients on a cutting board and chop to your desired consistency. The more you chop the smoother everything gets.
  4. Serve the chopped pickle egg salad on a piece of toast, romaine lettuce leaves, or crackers. Also, great as a sandwich!
