This is an easy, low carb meal with no sacrificing! If you are a pickle and avocado lover, you will love the tang the pickles bring and the richness of the avocado. Pickle Egg Salad Ingredients
- 5 eggs
- ½ avocado
- 1/2 cup dill pickles
- handful fresh dill, chopped
- ½ shallot
- 1 tbs dijon or grainy mustard
- 1 tbs light mayo
- ¼ cup cottage cheese
- Pinch of salt and pepper
Instructions:
- Hard boil the eggs. Make them using your favorite method.
- Peel eggs.
- Place all ingredients on a cutting board and chop to your desired consistency. The more you chop the smoother everything gets.
- Serve the chopped pickle egg salad on a piece of toast, romaine lettuce leaves, or crackers. Also, great as a sandwich!
