Cheesy Fried Pickle Balls


One of our favorite foods at the state fair has been the deep fried pickles.  That got me thinking that we should try something similar to tide us over from year to year. 

This recipe definitely does the job! And, I would almost describe the Pickle Balls as decadent with the delicious mix of cheeses.  You will find they are a scrumptious appetizer warm, and a delight if you like pickles!  

Cheesy Fried Pickle Balls ½ cup pickle chips, chopped and squeezed of liquid (I roll chopped pickles in paper towels and squeeze) 4 ounces cream cheese ⅔ cup cheddar ½ cup grated Parmesan, divided ¼ cup panko bread crumbs 1 large egg, whisked

Directions

  1. Mix the pickles, cream cheese, cheddar, and ¼ cup of parmesan cheese. Roll into 8 balls. Roll in the egg and then in ¼ cup Parmesan mixed with panko bread crumbs.


Fry in 1 cup avocado oil, if frying on the stovetop. 

Place a few of the balls into the hot oil at a time, cook until golden on all sides. Remove with a slotted spoon and place on a plate lined with paper towels. Work in batches until all are fried up .  OR, Air fry at 400degrees F for 8 minutes.  I chose to bake mine at 400 degrees F for 8 minutes and that worked OK.
