Salmon Hot Dish With Cream Cheese and Spinach



  1. Position a rack in the center of the ovenand preheat the oven to 400ºF.
  2. Combine olive oil, garlic, Italian seasoning, and red pepper flakes in a bowlalong with 1 teaspoon of salt and ½ teaspoon black pepper.
  3. Arrange the salmon fillets in a baking dishand cover with the marinade, set aside for 10-15 minutes on the counter while prepping the other ingredients.  (It is easier to eat the salmon if the skin is removed.)
  4. Quickly wilt the spinach in a skilletwith 1 tablespoon olive oil and set aside.
  5. Spread the softened cream cheese (I microwave for 30 seconds) over the salmon fillets and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.
  6. Bake the spinach salmon casserole for 20-25 minutes, until salmon is cooked through and cheese is slightly browned on the top. Sprinkle with red chili pepper flakes and chopped parlsey, if desired. Serve the spinach salmon casserole warm with a side of cauliflower rice

Note: I use Alaskan salmon my husband brought back from a fishing trip, so we have to watch for bones.
