2 smallish zucchinis
2 carrots
1 onion
Salt, pepper and spices to taste. This will give it some zip, so don’t be afraid to spice it up.
4 Tbsp. flour, cracker crumbs, or bread crumbs or a combination. 4 Tbsp. May not be enough if the mixture gets juicy from the Zucchini moisture.
2-4 eggs(number depends on how much zucchini you put in)
Grate the zucchini, carrots, and onion. Grate the zucchini separately and put in a colander. Let it sit until the juices come out, and squeeze most of it out. Then put everything in a bowl. You don’t want the mixture to be runny, so drain any liquid that accumulates. Mix well and cook like pancakes in hot oil. Slather with some butter if you wish, or top with a grilled burger with melted cheese, or wrap a sausage in it. Use your imagination! Note: If I save some to fry up the next day, I drain any juice off that accumulates, and may add some bread crumbs and another egg if I think it needs it to hold the cakes together.
