OMG P.B. Can-D

I’m not big on candy making, but these are easy to make and I’m a big PB fan, so there you go!  I like them better than Reese’s PB cups because these aren’t as sweet.  Making these would be a great little kitchen project with grandkids!  They freeze well, so make a double batch!

  • 1 cup creamy peanut butter
  • ¼ cup butter softened
  • 1 cup powdered sugar
  • 2 cups Rice Krispies cereal slightly crushed
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening

  1. Line a baking sheet with parchment paper or waxed paper.
  2. In a large mixing bowl, cream together the peanut butter, butter, and powdered sugar. Stir in the Rice Krispies until well combined.
  3. Cool the mixture in the frig, or put outside for 20-30 minutes in a MN winter. Shape the mixture into small bite-sized balls, place on the prepared cookie sheet, and chill again.
  4. Pour the chocolate chips and shortening into a medium microwave-safe bowl. Heat for 1 minute and stir, then continue heating in 20 second intervals, stirring well after each interval until chocolate is melted. Stir until completely smooth.
  5. Dip the chilled peanut butter balls into the melted chocolate and place back on the cookie sheet. Chill until the chocolate is firm.
  6. Drizzle with white chocolate chips, melted the same as the chocolate. Or, dip the chilled balls in white chocolate and drizzle with brown chocolate.  If you want to decorate with sprinkles, add them to the drizzled chocolate right away so it sticks to the drizzle before it hardens.
