LOW CARB Verde Chicken Cauliflower Casserole


20 oz frozen or fresh cauliflower florets (about 4 cups)

4 oz. cream cheese (low far works fine)

2 cups cooked chicken, shredded or cut up

½ cup salsa verde

½ tsp salt

1/8 tsp pepper

1 cup sharp shredded cheese (low fat if you can find it)

¼ cup sour cream (low fat works fine)

1 TBSP fresh cilantro (optional)



  1. Microwave cauliflower for up to 10 minutes, until fork tender (this will depend on the wattage of your microwave and if you use fresh or frozen)
  2. Add cream cheese and microwave another 30 seconds.  Stir.
  3. Add the rest of the ingredients.  Stir.
  4. Bake in preheated 375 degree oven for 20 minutes
  5. Serve hot


Note:  Gretchen likes to add a small can of Rotel tomatoes with peppers, and/or some black beans.
