Mama Roza | Ham, Gruyere, and Pear Galettes

Child making a galette Here is a fun recipe for fall, easy enough kids can do it.  Gretchen has pear trees, so she used her pear jam and fresh pears from the tree.  Try apple butter and apples, or any other combo you wish.  The Heim girls are all about experimentation, and have never made this recipe the same way twice!  Try pizza dough!
2 prepared pie crusts
1/4 C pear jam
2 T wholegrain mustard
2 medium pears, sliced 1/8” thick
3 slices Deli ham, cut into pieces
6 T shredded Gruyere cheese
2 t chopped thyme, plus more for garnish
1/4 t pepper
1 large egg
1 T water
1. Preheat oven to 400 degrees. Spray oil on 2 cookie sheets
2. Place pie crust on lightly floured surface and roll into 12” circle. Cut into 3 pie shaped pieces. Repeat with the next pie crust.
3. Combine jam and mustard in small bowl.  Spread on crusts, leaving 1” border.  Arrange ham and apples on top.  Sprinkle top with cheese, thyme, and pepper.
4. Fold sides up and roll over edge of filling.  Transfer to cookie sheets.  Whisk egg and water and brush on edges of dough.
5. Bake until pears are tender and edges a deep golden brown, about 30 minutes.  Garnish with more thyme or as you wish.
